Fish in a Tomato Sauce

My take on a classic Italian celebration meal - fresh fish with tomato, garlic and herbs. Perfect with ciabatta bread to soak up the juices, and a great way to use local seafood.

Method

  1. Warm the olive oil in a large frying pan over a low heat and gently cook the garlic and the onion. Take your time on this to make sure the onion is really soft.
  2. Add the pepper and cook for 5 mins to soften
  3. Turn up the heat and add the wine - give it a buble for 2 mins then turn the heat to medium.
  4. Add the tomatoes and fresh basil and simmer on a low heat for 10 mins.
  5. Add your fish and simmer for a further 10 minutes or until the fish is almost cooked.
  6. Put your final seafood in and your prawns - again simmer for about 5 minutes until they are all cooked. use a lid on the pan to make sure you get an even distribution of heat.
  7. IMPORTANT: The exact cooking time for the seafood depends on what it is - please make sure its safely cooked before you eat!
  8. Serve with fresh bread...

Notes

  • Any fish will do - its nice to base it on white fish, but worth using some with different texture like shark/tuna along with the white fish.
  • I like more olive oil than this - great with the fresh bread!
